A delicate grape/raspberry-like flavor. Rarely offered outside small batch settings, even when you can find it, it’s often European elderberry. This is wild foraged American black elderberry. Sorting the stems from the berries and sieving out the seeds is tedious but worth it for a smooth jelly versus what would be a much easier to make but seedy jam. I also macerate the berries in sugar for 48 hours in the French style of jelly making. The early August batch has a hint of tart cherry flavor, while the early September is closer to a concord grape.
